Domaine Éole is located 30 km south-west of Perpignan.
It consists of 3.5 hectares of vines in the Aspres region, planted on sandy, stony soil and farmed organically. The winery is in Céret.
In 2007, I helped set up an AMAP (Association pour le Maintien d'une Agriculture Paysanne) with René, a market gardener in Llupia, and the Energie Citoyenne association. I was discovering agriculture.
An epicurean by nature, I learnt very early on to appreciate good food and local produce, and when I was a teenager I started to discover the pleasures of wine.
I love being outdoors, working with my hands and the vine is a wonderful plant. I love learning how to complement, graft, regraft and pick to bring old vines back to life. It's also a way of preserving our plant and agricultural heritage!
Before starting out on my own, I spent five years working in the vineyard and wine industry, from general labourer to cellar master, even going so far as to make a few vintages in my own "ca...
